Ingredients: 
1) BRINJAL - 2 BIG ( 250 gm ) 2) CORIANDER LEAVES - 1/4 CUP Chopped 3) TOMATO - 2 Finely Chopped 4) ONION - 2 Finely Chopped 5) GREEN CHILLY - 1 6) GARLIC - 6-7 7) SALT - TO TASTE 8) JEERA - 1 TSP 9) GINGER - 1 SMALL 10) GARAM MASALA - 1/2 TSP 11) CORIAND
Directions: 
Take brinjal and half cut with knife. Check for any impurities if any. Put brinjal on stand on medium gas flame for roas. Roast from all sides by keep turning. Turn off gas after roasting properly. Put it in a plate and roast another Brinjal in same way. Let them to cool down. Put non stick pan on gas with high flame. Add 1/4 up of oil. When oil is hot, bring down gas to medium flame and add jeera, asafeatida and ginger-chilly-garlic paste. Mix well. Add onion and mix well. Close lid and cook for 2 minutes. After 2 minutes, add chopped tomato and mix well. Close lid and cook for 5 minutes. When Brinjal is cooled down, remove skin. Smash them with help of smasher. After 5 minutes, when onoion and tomato are cooked, adde smashed Brinjal paste. Add salt, red chilly powder, coriander powder, turmeric powder, jeera powder and mix well. Cook for 2 minutes. After that add garma masala and mix well. Turn off gas. Serve Baingan Bharta in a plate and enjoy delicious taste with Roti / Paratha / Puri / Rice.
