Ingredients: 
INGREDIENTS 1) FULL FAT- COW MILK  - 500 ml 2) VINEGAR - 1 TBSP 3) ROSE / ELAICHI ESSENCE - 1/2 TSP 4) SUGAR - 1 cup
Directions: 
Method. Put a pan on gas. Add milk and turn on gas on high flame. Boil it. Turn off gas. Cool down milk for 20% means keep it hot 80%. Add vinegar into it and keep it as it is for 30 seconds. Stir well , so that water and chhena will be separated. Take one bowl and put sieve over it. Put cotton or malmal cloth. Now pour chhena water over it to get it filter. Add cold water over it so that sourness of vinegar is removed. Fold cloth and bag shape. squeeze it with hand and remove water from chhena. Tie bag over wash basin tap and keep it for 30 minutes so that all water gets drop down from it. We dont need any water in chhena. After 30 minutes, take out chhena into a plate. Kneed it for 5-6 minutes with fingers to make smooth dough. Make 6 equal parts from it. Take one lump in hand and roll it to make round ball shape. Put it in a plate and prepare rest of rasgullas. Put a cooker on gas and add 5 cup of water and 1 cup of sugar. Boil it properly. Add one by one rasgullas into boiling water. Need 2.5 to 3 Liter cooker for 1/2 liter rasgulla and need 5 liter cooker for 1 liter rasgullas. Put close cooker lid half way and boil rasgullas. After 15 minutes, turn off gas. Rasgualls would be ready with expanded spongy texture. Let it cool down for 7-8 hours. Store them in freeze if need to use later. Serve Spongy Rasgulla in bowl with sugar juice and enjoy mouth watering taste.
