Aaloo Ki Kachodi | Stuffed Aloo Kachodi
Spicy potato mixture stuffed in all wheat flour... Enjoy with Raita/Curd/Green Chutney :)
Medium sized boiled potatoes - 2.5
Coriander powder - 1 Tsp
Red Chilli Powder - 1/4 Tsp
Saunf Powder - 1.5 Tsp
Salt - 1/2 Tsp
Heeng - A pinch
Green Chilli - 1/2 pc chopped
Ginger - 1/2 inch grated
Coriander Leaves - Few chopped
Atta/Wheat Flour - 2.5 cup
Salt - 1 Tsp
Mustard Oil - 1.5 Tbsp
Take the boiled potatoes and mash them very finely so that there are no pieces left.
Add coriander powder, red chilli powder, saunf powder, salt and heeng to the potatoes.
Add finely chopped green chilli, grated ginger, and few chopped coriander leaves. Mix everything well. Cover the bowl with a lid, and keep it aside.
Take wheat flour, add salt and mustard oil to it. Mix everything, and knead a dough with approx 1 cup of water.
Take a piece of dough and shape it into a small thick disc with your fingers. Keep a small portion of potato mix in it.
Now by pressing potato mix inside, make a ball of the dough. Cover it with dry flour from all sides. Roll it into a thick chapati with the help of a rolling pin.
Heat oil in a pan. Slide the rolled kachori into hot oil, and cook it on a medium flame. Once kachori puffs up and is cooked from the bottom, flip it.
Once it is well cooked from both the sides, take it out on a paper towel. Serve them hot with Raita/Yoghurt/Green Chutney & Enjoy :)
