Aloo Baingan ( Potatoes And Brinjal Curry)

Yet another popular North Indian curry that combines brinjals with potatoes. Ideal for rotis or rice. This is the first recipe that turned my brinjal aversive hubby to a brinjal tolerant person and now this curry is part of our family. There's a satwik version to this recipe which is very different and less spicy but I will share it some other day.

Ingredients: 
Brinjal- 6
Potatoes- 3
Onions- 2
Minced ginger- garlic- 3 tsp
Finely chopped medium sized tomatoes- 3
Turmeric powder- 1 tsp
Chili powder- 2 tsp
Coriander powder- 1 tbsp
Garam masala- 1 tsp
Salt- to taste
Slit Green chilies- 2
Curry leaves- 3-4
Coriander leaves- a fistful
Kasoori methi- 2 tsp (optional)
Oil- 2 tbsp
Directions: 
Peel and cube the potatoes. Chop the brinjal into cubes.
Slice the onions thinly and heat a wok. Add the onions and curry leaves and fry them till golden brown. Add the minced ginger and garlic followed by tomatoes.
Add the turmeric, chili, coriander and garam masala powder. Saute till the oil separates out from the onion-tomato gravy. Add salt and saute for another minute.
Add kasoori methi followed by the potatoes and brinjal and cook over low flame. Add coriander leaves once the potatoes are well cooked.
Decorate with slit green chilies.
Footnotes: 
If you want to cut down on chili powder add the sliced chilies with onion and saute them and avoid chili powder.
