Aloo Methi Without Onion
Made this simple aloo methi without onion and garlic when I had run out of both in the kitchen... So here it goes..
Potatoes: 2 pcs
Methi: 2 Cups Copped
Jeera/ Cumin seeds: 1/2 tsp
Amchur powder: 1/2 tsp
Red chilli powder - 1 tspn
Sugar: 1/2 tsp
Oil for cooking: About 2 tbsp
Salt to taste
Tomato : 1
Dice potatoes into small pcs
Heat a pan/ kadhai and add oil
When hot, add the cumin seeds and allow them to splutter. Add the potatoes, red chili power and saute
Cover an cook for 2 mins on low heat.
Add chopped methi leaves, finely chopped tomato, amchur powder and mix well. Add salt & sugar at this stage, mix again. Cover and cook for 10 mins on low heat
Open to check for doneness. If the potatoes and methi leaves are cooked well, remove from heat. If not, let it cook for 10 mins more on low heat.
The doneness may vary depending on the how old the methi is and how chunky the potato pieces are.
Remove from heat and serve hot with rice/roti
When I use methi, I also tend to use some of the stems and not leaves alone. I leave it to you to select how you like your methi...
