Beetroot Mezhukkupuratti (beetroot Stir Fry)

Beetroot is a dark-red vegetable with an acquired taste. It has been linked with better stamina, improved blood flow, and lower blood pressure. Beetroot stir fry is a simple recipe which is my favourite right from my childhood. I love preparing and serving this colourful recipe.

Beetroot stir fry.
Ingredients: 
Beetroot-1 big
Green chilli-3nos
Curry leaves-3
Oil-2 tablespoon
Small onion-4nos
Salt – as you need.
Directions: 
First cut the beet-root into small cubes.
Then add beetroot, green chilli and salt to a pressure cooker and cook it until you hear one or two whistle from the pressure cooker.
Place a pan on the stove and switch on the stove.
Put the already cooked beetroot into the pan.
Allow the excess water in the beet-root to get evaporated.
Then add oil, small onion and curry leaves and sauté it for about 5 minutes.
Beetroot stir fry is ready.

Green chilli can be replaced with red chilli powder.
