Ingredients:
Besan – 1 Cup
Sugar – ¾ cup
Ghee – ¼ Cup
Raisins – a hand full
Cardamom Powder- 1/2 Tsp
Directions:
In a Heavy bottomed pan, add a tsp of ghee, once hot add the raisins and toast them a little. Remove and set aside.
The same pan add remaining ghee, once it melts add besan , Keep stirring for at least 15-20 minutes on medium heat or till the besan till it becomes golden brown and starts releasing a nice toasty aroma. Do not stop stirring any time as the besan may form lumps.
You will see that the mixture turns runny and thin, which is ok, it will become a little stiffer when cool.
Add Cardamom Powder mix well and turn off the heat and let the besan cool completely. It may take quite a few hours(keep it under a fan to cool it faster). Now add powdered sugar to the mixture. Once mixed well, make small round balls and place a raisin on top.
Incase you feel the mixture is still too thin to mould, in a pan take some besan and dry roast for 15 minutes on low flame (stirring continiously) and add to the ladoo mix as required
Footnotes:
Use coarse besan- If Coarse Besan is not available add a little Suji (Semolina) to besan. (1 Cup Besan needs 2 Tbsp Sooji)
