Crispy Honey Chilli Potato

Ingredients: 
1. Potatoes (Medium) – 3 pc
2. Maida – ¼ cup + 1/8 cup
3. Corn flour – 1/3 cup + 1/8 cup + 1 Tsp
4. Oil – 1 Tbsp + 1/8 cup + for frying
5. Chilli flakes – ¼ Tsp
For seasoning -
6. Black pepper powder – 1/8 Tsp
7. Roasted sesame seeds – ½ Tsp
8. Ketchup – 1 Tsp
9. Vinegar – 1 Tsp
10. Soya sauce – ½ Tsp
11. Chilli sauce – ¼ Tsp
12. Honey – 1 Tbsp
13. Chopped garlic – 1 Tbsp
14. Grated ginger – 1 Tsp
15. Capsicum (small) – ¼ pc
16. Chilli flakes – ½ Tsp
17. Spring onion – 3 sticks (white + greens)
Directions: 
1. Slice the potatoes into thick juliennes.
2. Add them to boiling water along with some salt and cook for 5 minutes.
3. Then strain the hot water and cool the potatoes under running water, and put it in a bowl of ice cold water for 15 minutes.
4. In a bowl, take ¼ cup maida, 1/3 cup cornflour, 1 Tbsp oil, 1/8 cup water and ¼ Tsp chilli flakes.
5. Strain the cold water, put the potatoes in the bowl and mix everything well. Then refrigerate it for 20 minutes.
6. After refrigeration, add additional 1/8 cup maida, 1/8 cup cornflour, 1/8 cup oil and 1 Tsp salt to add on the extra crunch to the potatoes.
7. Mix everything again so that the potatoes are well coated with the mixture.
8. Separate each potato stick, and deep fry them in small batches so that they become crispy.
9. In a pan, take 1 Tbsp refined oil. Add garlic to it and sauté till it becomes golden brown.
10. Add all the remaining seasoning ingredients except honey and sesame seeds and cook them for 2 minutes. Leave few spring onion greens for garnishing in the end.
11. Make a paste of 1 Tsp corn flour with 2 Tbsp water, and add it in the pan along with honey, mix everything well and cook for another 1 minute.
12. Add potatoes to the pan and toss them well.
13. Add sesame seeds and chilli flakes as per taste and toss them again.
14. Garnish honey chilli potatoes with spring onion greens and few sesame seeds and enjoy !!
