Ingredients: 
Eggs - 3 nos
Potato - 1 big (diced)
Onion - 1 big (sliced)
Green Chillies - 1 or 2
Salt - 1/4 tablespoon
Oil - 1 tablespoon
Directions: 
Beat the eggs properly
In a frying pan, heat the oil and fry the onions & chillies
Add the potatoes and salt and fry till the potatoes are cooked
When the potatoes are cooked add the beaten eggs and keep on stirring till the eggs leave the sides of the frying pan and become dry
Egg Aloo Bhurji is ready to eat
Footnotes: 
Garnish with coriander leaves
Can be eaten with Roti (Indian bread) or Bread.
