Lady's Finger Raita (okra Raita/bhindi Raita)

Lady's Finger, washed and chopped in small pieces – 15 numbers
Onion - 1/2 chopped
Salt, as per taste
Oil for cooking
Thick yogurt - 2 cups
Green chili, roughly chopped - 1
Roasted cumin powder - ½ teaspoon
Red chilli powder - ½ teaspoon
Black pepper powder - ½ teaspoon
Pudina powder - ½ teaspoon
Heat oil in a pan for deep frying bhindi.
When the oil is hot enough, add the chopped bhindi, sprinkle some salt over it .
As they turn golden, take out on tissue paper to soak all oil.
Now in the same pan, heat 4-5 tablespoon of oil and add rai and hing and sauté for few seconds on low flame.
Add the finely chopped onion, pinch of salt and saute well.
As the onion turns golden brown, add fried lady's finger in it and give a quick stir.
Turn off the flame and let it cool for few minutes.
On the other hand, take a mixing bowl, add thick yogurt, salt, green chillies and red chilli powder, black pepper powder and blend it well.
Add the above bhindi masala mixture in yoghurt mixture and mix well.
Garnish it with cumin, chilli and pudina powder and serve immediately.
