Rhomesecret Recipe: Lahori Chicken
This recipe was first made at Renaissance Mumbai's Lake view cafe during #RHomeSecrets.
Lahori Chicken is our family recipe, a lip-smacking dish with a unique flavor of chicken cooked in a variety of spices
Chicken boneless - 1kg
Ginger-garlic paste - 2tbspn
Capsicum - 2 cubes
Onions - 2 cubes
Tomatoes - 3 cubes
Curd - 3 tbspn
Salt to taste
Everest Chicken Masala - 2 tspn
Red Chilli powder - 1tspn
Dhania( Coriander) powder - 2 tspn
Haldi (Turmeric) - 1 tspn
Kasuri Methi - 3 tbpsn
Oil - 6-7 big tbspn
Milk - 1 Cup
In a Kadhai take oil add capsicum - shallow fry a little & remove the capsicum in a plate
In the same kadhai shallow fry the onions till golden in colour – remove and set aside.
Add tomatoes and shallow fry till soft. Remove from heat and let it cool.
In a mixer add the sautéed onion, capsicum and tomatoes with curd.
Also add ginger-garlic paste and grind all of it into a smooth paste. This is our chicken masala paste.
In another kadhai take a little oil and add the marinated chicken, let it cook a little on medium heat till the water from chicken dries out (You may cook the chicken 60%).
Remove the chicken aside. In the same kadhai without adding additional oil, add all the dry masalas with the ground masala paste, chicken masala and salt to taste, roast it well, when it leaves oil add the half cooked, add milk and stir. Keep on slow flame with a lid on.
Remove the lid in 5 mins and if the gravy is little thick keep adding milk and no water according to your consistency, add the kasoori methi and cook for another 10 mins…..
Remove from heat and garnish with coriander leaves and serve with naan or paranthas.
To make Gravy do not add water , add milk for a rich flavour.
