Low Calorie Gajar ka halwa
3 Cups, grated Carrots
1 Cup, Unsweetened Almond Milk
2-1/2 tbsp, Sugar (you can adjust as per your taste)
½ tbsp, Ghee
2 tbsp, Raisins
2 tbsp, chopped Almonds
2 tbsp, chopped Cashewnuts
1/4 tsp, Green Cardamom Powder
Heat ghee in a pressure cooker; add carrots and sauté on a medium flame for 4-5 mins, while stirring continuously.
Add milk, mix well and pressure cook for 2 whistles.
Allow the steam to escape before opening the lid.
Transfer into a broad non-sticky pan, add sugar, mix well and cook on a high flame for 5-7 mins, while stirring continuously.
Add raisins, almonds, cashewnuts and green cardamom powder and cook for another 1-2 mins.
Serve hot or warm.
You can also use honey instead of sugar to make halwa more healthy.
