Mango Kadhi/gujarati Fajeto
kadhi with the twist of mango. Soury kadhi and sweet mango combination, mouth watering dish for summers.
aamras - 1/2 cup
buttermilk -1 glass
ginger greenchilli paste- 1/2 tsp
salt to taste
For Tempering :
rai - 1/4 tsp
dalchini -1 small piece
hing a pinch
kashmiri dry red chilli -1
oil -2 tblspn
In a bowl except tempering ingredients, whisk everything nicely into smooth paste,there should be no lumps.
in a utensil on medium flame keep stiring mango buttermilk mixture when boil comes simmer the flame and cook for 5 minutes or more till desired consistency.
in a mortar pestle coarsely ground clove and cinnamon
heat oil crackle rai, jeera,add karipatta, redchilli, hing, grounded powder and stir all nicely.
pour tempering over prepared kadhi and serve hot with roti or rice or both along with masala chach.
aamras should be sweet prepare it from either alphonso or totapari.
for aamras blend mango with little water.
