Mango Kulfi ( Mango, Saffron And Pistachio Ice Cream)
1 lt. Full Fat Milk
1 cup thick Mango puree .. Prefer used a Alphonso
3/4 cup Condensed milk or more as sweet u want
5 tbsp Pistachios soaked in warm water
5-6 Green Cardamom
20-25 Kesar strands( Saffron)
2 tbsp Milk powder
1 tbsp Almonds sliced optional
1 pinch Black salt
First soak peeled sliced pistachios, soak kesar in 2tbsp milk. Deseed cardamom seeds and crush it..Keep them aside.
Heat a pan add milk, boil it till it turns half in quantity..Add condensed milk mix well.. add milk powder add sliced pistachios, almonds and kesar in boiled milk..
Add Mango puree mix well..Now boil milk mango mixture for about 5 -7 minutes..Add black salt.
Switch off the flame..Let it cool ..Now in kulfi mould put some sliced pistachios and almonds pour kulfi mixture..Cover it and keep it in freezer for 6-7 hours or till it sets
After setting kulfi, unmould it and serve it.. Enjoy your kesar Pista Malai Mango Kulfi.
Sweetness can be adjusted as per your taste..
