This is an easy, quick and delicious pulao made in a pressure cooker within 30 minutes. This is a great party recipe for a large get together parties, serve it with any veg curry and raita.
Basmati rice - 1 cup
Onion - 1 ( sliced)
Green chillies - 2 ( cut length wise)
Ginger garlic paste - 2 tsp
Cinnamon - 2 pieces
Cloves - 3
Cardamom - 1
Water - 1.5 cups
Salt - to taste
Oil - 1 tbsp
Ghee - 1 tbsp
Nuts for the rice:
Cashewnuts - 10
Badam - 5
Pista - 5
Chopped coriander leaves - few
Soak the rice with 1 cup of water for 30 minutes and drain the water completely.
Heat some oil and a tsp of ghee in a pressure cooker, put all the whole garam masala, onions and green chillies. Saute till the onions become transparent.
Add the ginger garlic paste and continue till the raw smell disappears.
Then add the rice and fry for a minute and add 1.5 cups of water. Add the required salt and close the lid. Keep in low flame and cook for 10 minutes.
Heat the remaining ghee in a small pan and fry the nuts one by one. Add the fried nuts to the rice and mix them gently. Garnish with chopped coriander leaves.
Serve it hot with mixed vegetables curry.
