Oats Pao Bhaji

The yummy all time favorite Pao Bhaji with a healthy twist !!!

Assorted veggies of your choice – 2 cups (Bottle guard, egg plant, potato, capsicum, cauliflower, cabbage, carrot, beans) Note – You can choose any or all of the above veggies, but potato is a must, as it provides stickiness to the bhaji.
Chopped Onion – 2
Chopped Tomato - 1
Green chilli (optional) – ½ piece
Grated Ginger – 1 inch
Chopped Garlic – 10-12 cloves
Curry leaves – 7-8
Coriander leaves - chopped
Mustard seeds – 1/4th Tspn
Oil – 1 ½ Tbspn
Asafoetida – 1 pinch
Black salt – 1/4th Tspn
Salt – to taste
Pao bhaji masala – 2 ½ Tspn (depending on the spiciness you want)
Oats – 4 Tbspn
1. Put all the veggies in a pressure cooker with water (not much as veggies will have their own water too, just enough to submerge all the veggies). Cook this for 5-6 whistles to make them all super soft. 2. Mash the above cooked veggies to the consistency you like. 3. Heat oil in a pan, add mustard seeds and asafoetida. Once mustard seeds crackle, add curry leaves, garlic, ginger, onion, green chilli and sauté them. 4. Add tomato. Cook till tomato becomes soft and mashed up. 5. Add peas (optional) to this and cook a little further. 6. Add salt, black salt, oats and pao bhaji masala, and cook for a minute. 7. Add mashed vegetables, mix well, and cook for 7-8 minutes. 8. Garnish with coriander leaves. Serve hot with a dollop of butter on top.
