Peanut Sundal (verkadalai Sundal)

Sundal is offered as prasadam during Navratri, Ganesh Ghaturthi & other indian festivals. Sundal can be made from various legumes such as Chana ,Rajma ,Corn etc. One of my favourite is Peanut sundal. This is very easy to make & is very nutritious.

Ingredients: 
Peanut - 250gms
Grated coconut - 1/2 cup
Ginger & green chilli paste - 2 tbsp
Turmeric powder - 1/2 tbsp
Lemon juice - 2 tbsp
Asafoetida(hing) - pinch
Mustard seeds - 1/2 tbsp
Few curry leaves
Urad dal - 1 tbsp
Oil/ghee - 2 tbsp
Salt to taste
Directions: 
Soak peanut for atleast 30 minutes.Now cook the peanut with 1/2 tbsp salt and 1/2 tbsp turmeric powder.Pressure cook the peanuts on high heat for 2 whistles. Switch off the flame & allow the pressure cooker to cool down.
After the pressure cooker cools down open & drain the excess water.Heat a pan & add 2 tbsp oil .Add mustard seed, urad dal,hing,curry leaves & wait till they sputter. Add chili & ginger paste .
Add peanut and fry for 2-3 min. Now add turmeric powder & further cook it for 2 min.Add grated coconut,lemon juice and salt. Cook for 1 min & then turn off the flame.
Take a serving plate and put your peanut sundal on it.Garnish your peanut sundal with grated coconut, curry leaves and green chillies.
