Rajsthani Dal Bhati And Churma
This receipe is the Main dish for origins of Rajsthan. Tourists who visit Rajsthan love to taste the Delicious Dal Bhati and Churma. Being from Rajsthan I learnt this dish from my Mom and I would like to dedicate to her by posting it to the world.
200 gms aata
15 gms ghee
1/2 tea spoon of haldi
1/2 teaspoon of jeera
1/2 teaspoon of ajwain
Pinch of salt
1 bowl each of Moong Dal, Channa Dal, Aahar Dal and Red Dal
1/2 teaspoon of lal Mirch
1/2 teaspoon of minute sliced ginger
4 pieces of minute grated garlic
Preparation of Bhati : Take 200 gms aata,15 gms ghee, pinch of salt , 1/2 tea spoon of haldi, 1/2 teaspoon of jeera, 1/2 teaspoon of ajwain. Mix the batter tight but not like roti batter . Then make small round balls with hand and heat the balls in the bhati machine and check till it is baked properly . Once the bhati is baked then drop all the bhati in a plate or bowl and dip one by one in the desi ghee bowl and is now ready to serve in a Thali .
Preparation of Dal: Mixture of Moong dal, Aahar ki dal, Channa dal and Red dal . Boil with salt and turmeric for 20 minutes in a cooker . Once cooked place the dal in a bowl and simultaneoulsy make the preparation of Tadaka in the dal with Desi ghee by adding 1/2 tea spoon of jeera, little lal Mirch, 1/2 teaspoon of minute sliced ginger and 4 pieces of minute grated garlic. Put that tadaka in the dal , add a 1 cup of coriander leaves for garnishing and the dal is ready to serve .
Preparation of Churma: Crush the 6 to 7 batti in a grinder, take it in a bowl and add some desi ghee and desi sugar and mix it well and now place the mixture along with elaichi and heat in the kadai. We can add badam or kaju for flavour.
