Shavige Uppittu Or Vermicelli Upma.

Vermicelli upma is a very simple and delicious breakfast dish made with vermicelli,onions and vegetables.You can add your own choice of vegetables like carrot,peas,beans to make it even more nutritious.

Ingredients: 
Vermicelli – 200 Gms (I have used Dragon Rice sevai vermicelli packet).
Refined oil – 2 tablespoon.
Ghee – 1 tablespoon.
Mustard seeds – ¼ tablespoon.
Urad dal – ½ tablespoon.
Channa dal – ½ tablespoon.
Green chillies - chopped finely. 3 to 4 according to your taste.
Curry leaves – 5 to 6.
Ginger – ¼ inch crushed.
Cumin seeds – ¼ tablespoon.
Chopped vegetables – 1 Cup (Use shelled Peas, carrots, beans).
Onion chopped (optional) – 1 No.
Fresh grated coconut – 3 tablespoon.
Chopped coriander leaves – 1 tablespoon.
Salt according to taste.
Sugar (optional) – ¼ tablespoon.
Water – 2 Cups.
Lemon juice – 1 tablespoon(optional).
Directions: 
Add 1 tablespoon oil to a broad pan.
When oil is hot add vermicelli and roast till it turns golden brown.Keep the vermicelli aside.
In another broad pan put 1 tablespoon oil and 1 tablespoon Ghee.When oil is hot add mustard seeds followed by channa dal,urad dal and fry till the dal turns golden brown.
Add chopped green chillies,cumin seeds,curry leaves and saute for ½ min.
Now add Onion and chopped ginger to it and fry again till onion turns golden brown.
Add all the chopped vegetables and saute them in oil for 2-3minutes.Then add 2 cups of water to the pan and allow it to boil.(Finely chop the vegetables to ensure it to get cooked in a short time)
Add salt,sugar and reduce the flame.Add the vermicelli and mix well.
Close the lid and allow the vermicelli to get cooked properly(this process may take a maximum of 5 to 8 mins).
Switch off the flame.
Once cooked add Coriander leaves,grated coconut,lemon juice and mix well and serve it hot.
Footnotes: 
To reduce the cooking time,boiled vegetables could be used.
Roasted bambino or MTR vermicelli is also available.
If vermicelli is not properly roasted,the upma becomes very sticky.
