Shenganchi Patal Bhaji (drumstick Curry)

This is a unique sweet and spicy preparation from kitchens of Maharashtra.

2 Drumsticks
1 Tomato finely chopped
1 Large onion finely chopped
1/2 tsp mustard seeds
1/2 Tsp Cumin seeds
Pinch of Asafoetida (Hing)
1/2 tbsp Jaggery
2 Cups water
1/2 Tsp Ginger Garlic Paste
1/2 Tsp Turmeric powder
1 Tsp Chili Powder
Salt to Taste
Take oil in a Kadhai (Pan). Once oil is hot add mustard seeds, Cumin seeds and Hing
When they start to splutter add chopped onion and saute till onion becomes slightly pink
Add Ginger garlic paste, chili powder and Turmeric, saute for a few mins and add chopped Tomatos
Cook the masala for a few minutes till is turns brown then add the drumsticks followed by water
Let it simmer for a few minutes more, add salt, jaggery and cook on a medium flame with the lid closed
After 7 to 10 minutes check if drumsticks are cooked and serve hot with Fulkas or Chapatis (Indian Bread)
For more texture Chopped potatoes can be added
This recipe can be made without Ginger Garlic paste, instead add 1/2 tsp Garam masala powder
