Veg Clear Soup

A hot appetizer for a cold rainy evening... perfect medley of vegetables !!

Ingredients: 
1. Mix veggies – carrots, beans, cauliflower, cabbage, capsicum (finely chopped) – 1 cup
2. Spring onion greens (chopped) – 1 Tbsp
3. Corn flour – 2 Tbsp
4. Ginger (thin juliennes) – 1/4 inch
5. Garlic (finely chopped) – 3 cloves (optional)
6. Onion (finely chopped) – 2 Tbsp
7. Salt – to taste
8. Pepper powder – to taste
9. Water – 2 to 3 cup
10. Oil – 1 Tsp
11. Lemon juice - 1/8 tsp
Directions: 
1. Heat oil in a pan. Add ginger, garlic, onion, mix veggies. Sauté them till raw smell is gone.
2. Add in water, mix well. Add salt, pepper powder.
3. Mix corn flour with a little water to dilute it, and pour it in the pan. Let it boil for 2 – 3 minutes.
4. Add spring onion greens, and mix well. The soup is ready to be served piping hot !!
Footnotes: 
1. Peas/Corns can also be used in the soup.
2. Less quantity of each veggie can be used, if more soup is needed than the veggies.
