Nadru/ Kamal Kakdi Fry (dry Lotus Stem Recipe)

Lotus Stem or Kamal Kakdi is a crunchy and delicate flavoured veggie. It is actually a root vegetable. Lotus stem is a good source of dietary fiber; and is packed with Vimain C. I first had kamal kakdi ki sabzi in Kashmir and since then whenever I find it here in Delhi I buy it. This is a healthy recipe called Kamal Kakdi Fry. Its easy to make and goes well with dal chawal.

Ingredients: 
Kamal Kakdi : 1 stem
Ginger Garlic paste : 1tbsp
Chili powder and Turmeric : 1 tsp each
Salt to taste
Oil for shallow frying
Directions: 
Wash the lotus stem well. You can immerse in warm water for 5 mins to get rid of all the dirt from inside. Since the root veggie grows in mud, it may be a bit difficult to clean. But you can also buy the cleaned and sliced lotus stem roots from grocery marts in malls
Slice the stem very thin in circles. Like wheels
In a bowl, mix ginger garlic paste, salt, turmeric and chili powder. Mix well into a paste (this is your marinade for the stem)
Using your fingers apply this marinade on to each wheel on both sides
Heat oil for shallow frying in a pan. When medium hot, place the marinated wheels one by one
Cook them for 5 mins on each side on low to medium heat. The cooking time may vary depending on the thickness of your wheel
When they turn golden remove on paper
Arrange on a long plate and serve

You may also add pinch of garam masala and a little lemon juice for chatpata flavour
