Here is a peppy garlic pickle that is sure to shake awake your taste buds! In this Lehsun ka Achaar, the garlic cloves are flavoured with chilli powder and a special masala, made of four aromatic seeds and asafoetida. 

¼ cup oil ½ cup or 25 cloves garlic
1 tbsp kashmiri chilli powder / lal mirch powder ½ tsp turmeric / haldi pinch of hing / asafoetida 1 tsp mustard / rai ¼ tsp methi / fenugreek seeds ½ tsp fennel / saunf 1 tsp salt 2 whole lemon juice
firstly, in a pan heat ¼ cup oil. use mustard oil for more flavours. further add 25 cloves garlic, 3 green chilli and 3 inch ginger. saute on medium flame till the garlic turns slightly golden. do not over roast the garlic as it doesn't taste great for pickle.
