Aloo Aur Bhindi Ki Kallonji (stuffed Potato And Ladyfinger)

It is a complimentary recipe which is quite popular in Bihar and uttarpradesh. It is usually served at lunch with rice and dal. The recipe is quite tangy because of the presence of ‘’ Kathai’. Kathai is basically a mixture with is stuffed in ‘Red Chilli Pickle’. It is mixture of coriander powder, Paanchporen , Cumin powder, Ajwain, Asafoetida and Black salt.

Aloo potatoes) 2-3 pieces
Bhindi (ladyfinger) 5-6 pices
Coriander leaves 25 grams
Garlic 7-8 cloves
Green chilli 1 piece
Mustard oil 4-5 tablespoon
Khatai 2 tablespoon
Salt ½ tablespoon
Cut the potatoes into halves and then make a half cut from one side so that we can fill the stuffing. Similarly cut the head and tail of ladyfinger and make a cut on one surface.
For the stuffing grind the coriander leaves, garlic and chilli together and add the khatai.
With this mixture stuff the aloo and bhindi.
Once all have been stuffed, heat oil in a pan or karahi and first put the bhindi. Cover the pan with a lid and cook for 2-3 mintues on a low flame. Turn the bhindi once one side is done. Again cover the pan and cook for 2-3 mintues.
Take out the bhindi and put the stuffed potatoes. Follow the same procedure. Aloo will take some more time to become tender. Once done serve with Rice and Dal.
