Aloo Aur Sev Ki Sabzi (potato & Gram Flour Snack Curry)

A typical Rajasthani loves to relish namkeen or sev as side-dish with meals, while in most parts of the country, people have it as a snack. Previously I shared a unique paratha made with namkeen, but recently I was amazed to hear that people use namkeen/ sev to make sabzi in Rajasthan. In the last weekend, before preparing dinner, I realized that the only vegetable left with me was potato and we already had potato sabzi the other day. So my sister-in-law suggested me to prepare namkeen/sev ki sabzi with aloo. So today, I will be sharing this extremely delicious and spicy sabzi that can be partnered well with any roti/ paratha.

Potato - 2 medium-sized
Tomato - 2 medium-sized
Onion - 1 medium-sized
Namkeen/ Sev - 1 bowl
Cumin Seeds - 2 tsp
Ginger - Garlic Paste - 1 tbsp
Green Chilies - 1 (finely chopped)
Turmeric Powder - 1/2 tsp
Red Chili Powder - 3/4 tsp
Dry Mango Powder - 1/2 tsp
Roasted Cumin Powder - 1/2 tsp
Coriander Powder - 1 tsp
Oil - 2 tbsp
Salt to taste
Water - 1 cup
Heat oil in a Kadhai and add cumin seeds. As it crackles, add green chilies and ginger-garlic paste.
Put sliced onions into the kadhai and saute till become golden brown in colour. Now add turmeric powder and diced potatoes.
Now, add salt as per taste and cover the kadhai with a lid.
Allow the potatoes to cook on medium flame for 10 min. Keep checking in between.
As the potatoes become soft, add finely chopped tomatoes.
Now, add red chili powder, roasted cumin powder, coriander powder and dry mango powder.
Saute well till tomatoes become soft.
Add enough water and let the consistency be runny as when we add sev, it will soak the gravy. Bring to boil.
As the curry boils, add 1 bowl of namkeen/ sev and remove from flame. Serve hot.
