Aloo Masala (potatoes Cooked In Indian Spices)
Aloo masala is my all time favourite Tiffin recipe. It does not require much preparation and I can easily carry it with chapatti, paratha or at times even as a sandwich stuffing with plain bread for my Tiffin.
Aloo (potato) - 2 pieces
Onion -1 medium sized
Tomato - 1 piece
Red chilli powder - 1/4 tablespoon
Turmeric powder - 1/4 tablespoon
Coriander powder -1/2 tablespoon
Refined oil - 2 tablespoon
Salt - 1/2 tablespoon
Cut aloo in cubes. Chop onion and tomato finely and keep aside.
Heat oil in a pan or kadhai and add the chopped potatoes
Fry on medium heat till it turns light brown.
Now add chopped onions, tomato, red chilli powder, turmeric powder, coriander powder and salt and mix.
put a lid on and cook the vegetables on low heat till the potato is done.
Serve hot with Chapatti.
Do not add water, it will spoil the taste.
You may also add a bit of anardana powder and sprinkle kasuri methi for a richer taste
