Aloo Methi ( Potato With Fenugreek Leaves)
A spicy recepie to be served with Parathas.
Kasuri Methi( dry fenugreek leaves)- 1 cup
Oil- 2 big tsp
Onion- 1 medium size
Potatoes- 3 medium size
Red chilli powder- 1 tsp
Amchur (dry mango pwder)- 1 tsp
Salt to taste
Turmeric powder- 1 tsp
Soak kasuri methi in half cup warm water for 30 mins.
Heat the oil add finely chopped onions and cook till golden brown.
Add red chilli powder, dry mango powder, salt, turmeric powder.
Add boiled potatoes (cut into 1 inch pieces). Mix well
Add 1/4 cup of water. cover and cook for 5 mins.
Take out in a serving bowl. Garnish with Coriander leaves.
Potatoes should not be over boiled.
