Aloo Palak Paratha (indian Bread Stuffed With Potatoes And Spinach)

Parathas are very common in Northern India. The interesting thing about parathas is that you can make parathas of almost everything, vegetables, pulses, dairy products, poultry and meat. Here is one of my favourite paratha recipe, which has a combination of potatoes and spinach.

Ingredients: 
(For stuffing)
Boiled Aloo (potato) - 2 pieces
Spinach - 1 cup ( chopped)
Onion - 1/2 cup (chopped)
Green chilli - 2-3 pieces (chopped)
Garam Masala powder - 1/4 tablespoon
Salt - 1/4 tablespoon
(For paratha)
Atta / Maida ( wheat flour/ refined flour) - 2 cups
Refined oil - for frying
Pinch of salt
Ajwain - 1/2 tsp
Water - to make dough
Directions: 
Take the atta in a bowl, add salt, ajwain seeds and two- three tablespoon of oil and mix.
Now add required amount of water and make dough. Wrap it in muslin cloth and keep aside.
For the stuffing take a large bowl. Add mashed potatoes, chopped onion, chopped spinach, chopped chillies, garam masala powder and salt and mix.
Heat two tablespoon of oil in a karahi and pour the potato mash. Fry for 2-3 minutes and keep aside
To make paratha, take small portions from the dough and make balls.
Fill each ball with the stuffing and then roll it with the help of a rolling pin
Heat a flat pan and place the paratha. Apply some oil on the surface and then flip it on other side. Apply oil and cook both sides till it turns light brown.
Serve hot with coriander chutney.
Footnotes: 
If you like tangy taste you may add some dry mango powder.
