Atukula Dosa (set Dosa Or Set Pancakes)

Set dosas as they are popularly known in Karnataka are spongy 5- 6 inch round dosas that has pores all over and is mostly made in a cast iron pan for crispy bottoms. They are often served as a set of three and therefore they get the name 'Set dosa'. They are made with poha, rice and urad dal hence they are also known as poha dosa.

Rice- 2 cups
Urad dal- 1 tbsp
Poha- 1 cup
Curd- 1 cup
Salt- 1 tsp
Baking soda- 1/4 tsp
Oil- for greasing the pan
Water- 2 cups
Prepare buttermilk by adding water to curd.
Wash and soak the rice, urad dal and poha for 3-4 hours in the buttermilk.
Drain the rice-poha- urad dal and reserve the buttermilk.
Grind the rice mixture with the buttermilk reserve and add salt.
Leave the batter for fermentation for 6 hours minimum or overnight.
To make these dosas heat a pan drizzle some oil and pour in a ladle of the batter when the pan is hot.
You will see pores in the dosa. And when the bottom browns flip over to the other side.
Serve the dosa with chutney and sambar after both the sides of the dosa has browned.
