Baigan Fry/ Begun Bhaja (bengali Brinjal Pan Fry)

This is an eazy bhaja dish. Bhaja is a pan frying method used in Bengali homes. Almost every family in Bengal makes bhaja with various vegetables to accompany khichadi or at times simple dal chawal. A bhaja can give any simple meal a great punch of taste... This is how my mom makes it.

Neha Sen's Secret Indian Recipe !

Preparation Time:

1 large baingan or eggplant
1 Tsp Ginger Garlic Paste
1 Tsp Red chili powder
1/2 Tsp Turmeric
1/4 Tsp garam masala (home made)
Salt to taste
Sarso oil for pan frying
1/2 tsp Amchur powder
2 Tbsp rice flour
Wash the eggplant/ brinjal before cutting
Cut the baingan horizontally in to thick discs
In a bowl, mix all the above ingredients except for oil. It will become like a semi thick marinade rub
Rub the masala on to every baingan disc
Heat about 4 tbsp sarso tel (Mustard oil) in a non stick pan. When hot, place the masala rubbed baingans one by one next to each other
Cook on medium heat on one side for 5 mins then turn the baingans and cook on other side for 3 to 5 mins
Baingans dont take much time to cook, but can burn easily, so don't leave them unattended
Sometimes the cooking time pay differ based on the quality of the baingan. So cook till each side becomes golden brown and slightly crispy
Bhaja can be made of Baingan, Potato or even bhindi
