Baigan Masala Bharta (spicy Mashed Brinjal)
Baigan masala bharta is a north Indian side dish recipe which is usually served with chappati. In this baigan is first roasted and then various spices are added to make bharta to give it a unique taste.
Baigan (brinjal) – 200 grams
Onion – 2 pieces (chopped)
Tomato – 1 large piece (chopped)
Green chilli – 2 pieces (sliced)
Garlic – 8-9 cloves (crushed)
Garam masala powder – ½ tablespoon
Red chilli powder – 1 tablespoon
Turmeric powder – ½ tablespoon
Salt – 1 tablespoon
Mustard oil – 2 tablespoon
Kasuri methi (dry fenugreek leaves) – ½ tablespoon
Green coriander leaves – ½ cup (chopped)
Apply some oil on the surface of the brinjal and then roast it over the gas. Once done let it cool and then peel off the burned skin and take out the pulp. Mash it and keep it aside.
In a karahi heat oil and then add chopped onion and green chilli. Once the onion turns light brown add the tomatoes, garlic, red chilli powder, turmeric powder and garam masala powder. Saute for few seconds and then add the mashed brinjal , salt, kasuri metji and half of coriander leaves. Mix well nas sauté for a mintues. Garnish with rest of coriander leaves and serve with chappati or paratha.
Cut the brinjal slightly from sides to check if it does not have worms.
