Batata Vada ( Potato Fritters)

Ingredients: 
Boiled Potatoes 4
Ginger minced 1/2 tsp
Curry leaves handful
White spilt urad dal 1 tsp
Mustard seeds 1 tsp
Green chillies minced 1/2 tsp
Haldi 1 tsp
Coriander 2 tbsp chopped
Salt to taste
oil for deep frying
FOR COATING
Besan 2 cups
1/2 tsp haldi
1 tbsp rice flour
little less than 1 cup water
Directions: 
In a bowl mash the potatoes well, make sure no lumps remain
Heat 3 tbsp oil, when hot add urad dal, minced ginger, chillies, 1 tsp haldi, mustard seeds and give a quick mix
Add this mixture to potatoes.
Add salt and chopped coriander
Mix and knead everything well
Make equal sized rounds from the potato mix
Meanwhile heat oil for deep frying
In a separate bowl, take besan 2 cups, all salt to taste, 1 tbsp rice flour, 1/2tsp haldi and mix
You may also add little baking soda (that's optional)
Now add water little by little and mix
The coating mix should be like a thick pancake batter that stays on the back of a spoon when dipped in
Now slowly dip the potatoes balls in the besan mix, coat evenly and release in hot oil.
Cook on medium heat for 1 min
Make sure the oil is not smoking hot, it should be medium hot, so the thick besan coating cooks throughout
Serve hot with green chutney
