Batibasa , A Heirloom Recipe

The land of Utkal (Odisha) is well known as a petal of lotus Bharat.People are endowed with rich culture & high tradition. So as the varieties of traditional food continually flourishing through ages.Starting from "Dalma" to "Poda-pitha" all those popularizing by flow of time. Still there are many more unsung recipes fading by time with lack of interest in learning them by our new generation. Impact of western food among youngsters gradually bringing a drastic change in Indian palate.
"Batibasa" is such a traditional recipe of Odisha where everything is mixed up in a bati(aluminium bowl) cooked at slow flame.You can make varieties of this with many vegetables & fish. Today dish is made using "pita-gima leaves" which are bitter in taste ,a creeping-ascending herb usually found around ponds, graasy areas & cultivated fields. It's very good for diabetic people.

Ingredients: 
2 cups Pita-gima leaves
One Small potato
2 Green Chili
2 Red Chili
8 cloves Garlic
1 tsp Cumin seed
1/2 tsp Black Mustard
1/4 tsp Turmeric
1 tbsp Mustard Oil
Salt to taste
Directions: 
Make a paste of gima-leaves, green chili, red-chili, garlic, mustard, cumin.
In a bowl add this paste ,mix turmeric, salt and oil to it.
Add thin sliced potato to it.
Cook at slow flame for 15-20 minute.
And it's ready. Serve hot.
