Beans Thoran (stir Fry With Coconut)

It's a very simple dish that's served along with steamed rice. It's a Kerala recipe usually seen in Onam Sadya. Most of the kids love beans. They are less in fat and full of fibre, so can be used for weight management. It is good for kids and pregnant women. This is one of my favourite recipes.

Ingredients: 
Beans - (chopped into thin pieces)-1/2 kg
Cumin seeds - 1 tsp
Garlic - 2or 3 cloves
Turmeric powder-1/4 tsp
Kunjulli- (shallots) -4
Salt - to taste
Curry Leaves-Few
Green chilli-4
Coconut grated - 1/2 cup
Mustardseeds - 1/2 spoon
Coconut oil-1 spoon
Water for grinding -2tsp
Directions: 
Grind together coconut with 2 tsp of normal water, green chilli, cumin seeds, garlic, shallots and turmeric powder.
Heat 2 tsp of coconut oil in a non stick pan and add mustard seeds.
When mustard seeds splutters add beans and curry leaves and sauté for 2 minutes.
Add ground coconut paste and salt to taste. Combine everything well.
Cover the pan and cook on a low flame for 3 to 5 minutes, stirring occasionally. After 3 to 5 minutes, Beans Thoran is cooked and ready to serve.
Footnotes: 
Cooking times may vary depend upon the type and age of beans. Older beans may take longer time to cook.
