Beetroot Chutney

Beetroot is rich in fibre and antioxidants.Consuming more fibre rich vegetables helps in improving digestion and antioxidants helps in increasing the white blood cells.They are one of the richest sources of glutamine, amino acid which is essential to the health and also assist in preventing constipation and help to lower cholesterol levels. Varieties of dishes are prepared using beetroot. It is a healthy diet. Here is a simple beetroot Chutney which could be served with rice, dosa, and chapati.

Beetroot 1
Cumin seeds (Jeera) ½ tsp
Red chilli 2-3 (as per your taste)
Curry leaves handful
Garlic 2-3
Oil 2 tsp
Mustard seeds ¼ tsp
Salt - to taste
Channa dal and urad Dal - 1 tsp
Peel the skin of the beetroot and chop this into small cubes
In a pan, add oil , cumin seeds, redchilli, garlic, curry leaves,salt urad dal and chana dal
Cook this in a low flame till the dals turn golden brown and Keep this aside
Now add the chopped beetroot and fry this on low flame and add a Tsp of oil, Cook for 10 mins
Allow it to cool down and then Grind this along with the dal mixture to form a fine paste
Now take a pan add a drop of oil and mustard seeds,When it splutters, add the grinded beetroot chutney and mix it well on low flame
Beetroot chutney is ready to serve
