Beetroot Curd Curry
It's a traditional Kerala dish which we serve during our feast.This has an extremely vibrant color that's really mouth watering...You'll definitely love it.
1 cup grated Beetroot
1/2 cup grated Coconut
3 green chillies
Few mustard seeds and curry leaves
2 tsp oil
Salt to taste
1 cup curd
First grind coconut, chillies, curry leaves in a blender.
In a pan pour oil and splutter mustard seeds. Afterwards add grated beetroot and cook for 6minutes.
Pour grounded coconut paste and mix well. Close the lid and cook for 10minutes.
Then off the flame and add curd and mix well.You can add salt accordingly.
Serve hot with rice or chappatis.
