250 Gm Small Brinjals
2 Onions Cut into large Cubes
1 T spoon Garam Masala
2 T spoon Peanuts( Moongfali)
1/2 T Spoon jeera
2 T SpoonCrushed Dry Coconut
1 T Spoon Ginger Garlic Paste
Salt to Taste
1/2 T SpoonTurmeric powder
1/2 Red Chilly Powder
1/2 T Spoon Suger
2 Large Spoon Imly Pulp
2 Spoon Refined Oil
3-4 Curry Leaves
Cut the Brinjals into Four Quarters held Together at the Stalk
Dry Roast the Onion on Tawa till They Turn Soft
Dry Roast Peanuts, Jeera, Dry Coconut on Tawa
Grind the Roasted Onions and Roasted Peanuts, Jeera, Dry Coconut.
Add Imly Pulp and Salt in the Grinded Paste.
Stuff the Brinjals with Masala
Heat oil in Pan, Add Curry Leaves, Saute for 30 seconds
Add the Stuffed Brinjals and saute About 10 Min.
Add the Remaining Masala and Mix Gently. Add One Cup Water, Cover and Cook over low Heat till Brinjals are cooked and Oil rises on the Surface. Serve Gently.
Serve with Roti or Rice. Enjoy Cooking
