Bhindi Masala (okra Prepared With Spicy Indian Masalas)

Bhindi Masala is a staple vegetarian side dish recipe which is quite popular in North India. I learnt this recipe from my Sindhi friend in Mumbai, she has mastered this recipe. When I make it, it still doesn't taste as good, but its an excellent recipe. Here is my version of this okra/ lady finger dish.

Bhindi ( Okra) - 250 Grams
Onion - 1 piece ( Finely chopped)
Tomato - 1 piece ( chopped)
Turmeric powder - 1/2 tablespoon
Red chilli powder - 1/2 tablespoon
Mustard oil - 3 tablespoon
Salt - 1/2 tablespoon
Wash the bhindi, pat dry with a cloth or paper towel and cut into medium pieces.
Heat 2 tablespoon oil in a pan and add the bhindi. Fry the bhindi on medium heat till the sides turn brown. Take out and keep aside.
Add the remaining oil and put chopped onion. Sauté for 2 minutes, add turmeric powder, red chilli powder, tomato, salt and mix well. Let the masala cook covered on low-medium heat for good 3 minutes. Next, add in the Bhindi
Put a lid on and cook the vegetables on low heat for more 2 to 3 minutes
Serve as a side dish with chapatti or rice and dal.
Add some chopped coriander leaves as garnish
