Bottlegourd And Broken Wheat Idly

. This idly with broken wheat and grated bottlegourd is highly nutritious and loaded with fibre. It's very easy to make and the best part is it keeps you full for hours. The ingredients are easy to gather, and you only need to do a little preparation by grating the bottle gourd and roasting the broken wheat. Combine the grated bottlegourd with broken wheat and enjoy with sambar and chutney.

Broken wheat - 1 cup
Thick Curd - 1/2 cup
Water - 4 tbsp
Grated Bottlegourd - 1/4 cup
Chopped Green chilli - 1 tsp
Curry leaves - few
Coriander leaves- few
Mustard seeds- 1/4 tsp
Urad dal (Black lentil)- 1/4 tsp
Channa dal (Split Bengal Gram) - 1/2 tsp
Baking soda - 1/4 tsp
Oil - 2 tsp
Salt - as required
Heat a pan and dry roast the broken wheat until it gives you a nice flavour. Take out this dry roasted wheat in a mixing bowl.
In the same pan heat 1 tsp oil and add the mustard. When the mustard starts to splutter add the channa dal and green chillies. Saute it for few seconds and add the curry leaves.
Then add it to the roasted broken wheat. Then mix it with the thick curd, grated bottlegourd, salt and water. Keep it aside covered for 30 to 40 minutes.
After 30 minutes add some more water, if all of the water and curd is absorbed by the broken wheat. Finally, add chopped coriander leaves and baking soda. Mix the batter well.
Grease the idly plates with little oil and fill in the batter in each idly hole. Steam cook for 20 mins. Then remove the idlies gently with a spoon. Serve it hot with sambar and chutney.
