Carrot, Beans Thoran (carrot And Beans With Coconut)

As we all know both carrot, and beans are rich in vitamins and proteins. I am going to show you how to cook a traditional thoran with carrot and beans. Children will love this thoran as the color combination of carrot, beans, and coconut coated with turmeric powder add to the visual beauty of this recipe.

Carrot, Beans Thoran (Carrot and beans with coconut)
Ingredients: 
Carrot -250 grams
Beans -250 grams
Grated coconut -1/2 cup
Coconut oil-2 tablespoon
Green chilli -4 nos.
Turmeric powder-3 pinch
Curry leaves-2 sprig
Mustard seeds -1 teaspoon
Salt-as you need
Directions: 
Grind grated coconut and turmeric powder in a mixer grinder.
Switch on the stove.
Put a pan on the stove and add coconut oil.
Add mustard seeds and curry leaves to the hot oil.
Allow the mustard seeds to splutter.
Then add carrot, beans, salt and green chilli.
Add grounded coconut and turmeric powder and mix it well.
Now add 1/2 cup of water and cook it covered for about 10 minutes or till the veggies are done.
Serve as a side dish.
