Carrot Kulfi (carrot Icecream)

My 5 year old daughter was crazy about eating Icecream. Her addiction was so bad that I was constantly worried about her health as Packaged Ice creams contain transfat which is very harmful for kids. I used to watch Food shows & One day while watching a show on making icecreams / kulfi at home. I was really surprised to see that we can make icecream healthy by making it at home. When I read about Kids healthy recipe contest on, I thought this is a great platform to share my healthy icecream recipe.

Milk - 500 ml
Carrot - 1 cup grated
Saffron - few strands.
Almonds - 4-5
Sugar - 4-5 tablespoon
Ghee - 1/2 tablespoons
Begin with soaking the Almonds in water for at least 2-3 hours. After soaking Peel them and make a paste by grinding with little water.
Keep the milk for on heat for boiling
Now heat the ghee in another pan while your milk boils.. When the ghee is hot, add the grated carrots. Saute the carrots for a mintue and then switch off the gas.
Then add the sauteed carrots in milk, add saffron and sugar and continue to boil till the milk reduces to 1/4 of the actual quantity.
Now pour this kulfi mixture in Kulfi Moulds and keep in refrigerator for 6-7 hours.
Once set, unmould and serve immediately.
You can also mix almonds and pistas if your kids like nuts
