Cauliflower Do Pyaza

Do piyazaha was the name of a mughal chef; his preparation of mutton was called do piyazah. But in this particular dish onion is used in two different ways, so the name is given do piyazah.

Cauliflower chopped 2 cups
Onion chopped 1 cup
Onion paste ½ cup
Poppy seeds paste 2 tbsp
Sunflower seeds paste 1 tbsp
Red chilli powder 1 tsp
Garlic paste 2 tsp
Kewra (essence) water 2 tbsp
Salt to taste
Refine oil for frying
Mint leaves few
Turmeric powder ½ tsp
Marinate cauliflower with salt and turmeric powder
Heat oil in a pan and fry the cauliflowers, keep aside
In the remaining oil add chopped onion and fry, keep aside
Heat 2 tbsp oil in a pan and fry onion paste
Add garlic paste, chilli powder, sunflower and poppy seeds paste
Mix well, add salt and cauliflower, cook for 5 minutes
Add 1 cup water and mint
Cover the pan and cook for 5 minutes
Add kewra water and remove from hear
Sprinkle fried onion on the dish and serve
