Chicken Adraki (ginger Chicken)
This dish is a blends ginger flavour with chicken in cashew paste.....
Chicken Boneless - 1/2 kg
Ginger julliennes - 100 gms
Cashew - 25gms
Onion - 4 medium
Tomatoes - 4 medium
Green Chillies - 4
Turmeric(haldi ) - 1/2tsp
Garam Masala powder - 1 spoon
Red Chilly powder - 1 spoon
Whole Garam masalas - Cloves, Bay leaf,Cumin seeds, a small piece of mace.
Green Cardamom - 3-4
Curd - 1 big tbspn
Ginger garlic paste - 1 tbspn
Fresh coriander leaves for garnishing
Kasuri Methi - 1 spoon
Salt to taste
Marinate Ginger Garlic paste and salt on the chicken let it rest for minimum 2 hour. After 2 hours, grill it till cooked well and keep aside.
In mixer add onions, ginger garlic paste, 2 green chillies, curd and tomatoes, grind it well.
Make Cashew paste with little water, keep aside.
In a Kadhai add oil and then add whole masalas, cloves, cumin, green cardamom( crushed) bay leaf and mace. and add the grounded puree, fry it or in other words 'Bhoono' well. When oil leaves the side of the kadhai add the dry masalas like red chilli powder, salt to taste and garam masala powder.
Add cashew paste and grilled chicken to this and bhoono on slow flame.....then add haldi / Turmeric over it and mix well.
In another pan take little oil and add the ginger julliennes and let it roast , pour this over the chicken and mix well. Garnish with kasuri methi and coriander leaves.
Best served with Laccha parantha. We can add more ginger as per taste.
