Coconut Rice Roties
An authentic Kerala dish made with rice, coconut and some spices.
Rice flour 1 cup
Coconut grated 1/2 cup
Shallots 8 number
Garlic 2 pods
Jeera ( Cumin) 1/2 yeaspoon
Water one cup
Salt to taste
Oil for frying
Grind the coconut with shallots, garlic and jeera to a fine paste.
Mix this with the rice flour and keep aside.
Boil water with enough salt. Once starts boiling add the rice flour and mix well with a spatula. Switch off the stove.
When the mixture cools a bit knead well to a soft dough and make lemon sized balls.
Roll out each ball into medium sized roties and deep fry in oil until it puffs up and golden brown both sides.
Transfer to an absorbent paper to remove oil and serve as a perfect tasty teatime snack.
These ingredients are the same for kuzhalappam. Since I was unable to get a perfect shape, changed into roties and was perfect.
