Crispy Karela (crispy Bitter Gourd)

Bitter gourds or karela, are very low in calories but dense with precious nutrients. They are excellent source of vitamins, magnesium, iron and has high dietary fibre. Most of us avoid this nutritious veggie because of its bitterness. But these taste great when sliced into thin rounds, deep fried with masala coating.

Crispy Karela (Crispy bitter gourd)
Bitter gourd (karela) 6-7 Pieces
Chopped onions 3-4 Pieces
Chopped tomato 1 Pieces
Green chillies 2-3 Pieces
Funnel seeds 1 teaspoon
Cumin seeds 1 teaspoon
Coriander powder ½ teaspoon
Turmeric powder ½ teaspoon
Red chilli powder ¼ teaspoon
Garam masala powder ¼ teaspoon
Pinch of Asafoetida (hing)
Salt to taste
Oil to fry
Wash the karelas and cut into round slices. Sprinkle salt all over the karelas and keep aside for 3-4 hrs.
Squeeze out all the water and wash again. The salt will release water.
Heat the oil in a pan for deep frying.
Once the oil is heated, deep fry the chopped karela till they turn dark golden brown and crispy and keep them aside.
Heat 3-4 teaspoon oil in a pan. Now add funnel seeds, cumin seeds and hing. When they start popping add green chillies and onion, fry till they are golden brown.
Now add tomatoes, turmeric powder, coriander powder, red chilli powder and garam masala. Mix it well and cook for 5-6 minutes on low flame.
Mix in the fried karelas to the above masala and stir fry for a min.
Crispy Karelas are ready to eat with roti.
