Dahi Bhindi (lady Fingers In A Curd Based Gravy).

Lady Fingers are full of nutrients but many children don't fancy them. Same was the case in my home till I made Mor Kuzhambu and Dahi Bhindi....and seeing the children relish the dishes made, is so satisfying :)

Sandipa Roy Barman's Secret Indian Recipe !

250gms Bhindi/Lady Fingers
1 Cup thick Curd
2 Tbsp Besan
2 Tsp Coriander powder
2 Tsp Amchur powder
1 Tsp Cumin powder
1 Tsp Chilli powder
1 Tsp Garam Masala
½ Tsp Turmeric
1 Tsp Oil
Salt to Taste
For tempering:
½ Tsp Cumin seeds
½ Tsp Mustard seeds
2 Dry Red Chillies
Some Curry Leaves
2 Tsp Ghee/Oil
Clean and dry lady fingers and cut into half. Mix all the dry masalas, salt and oil and coat the lady fingers with it.
Pre-heat oven at 200degres. Line a baking tray with grease proof paper and line the pieces of lady fingers on it and toast for about 30 mins or till it becomes crispy.
Whisk the curd well. Heat ghee/oil in a kadhai and put dry red chillies, cumin, mustard and curry leaves, Once the mustard splutters add the crispy lady fingers and stir for a minute. Add the curd and mix well. Take it off the fire after a minute. Serve hot with Ghavnes, Ambolis or Rotis.
