Dalpuri /dal Ki Puri (gramflour Lentil Puri)

Dalpuri is a very common recipe across India. In this recipe a mixture of Bengalgram is stuffed in wheat flour Puri. Dalpuri is quite frequently served during festivals and religious ceremonies in Uttarpradesh.

Channa dal (Bengal gram) 100 grams (3.5 ounce soaked for an hour)
Cumin seeds ¼ tablespoon
Garlic 2-3 cloves
Red chilli 1 piece
Turmeric powder ¼ tablespoon
Salt 1 tablespoon
Mustard oil 2 tablespoon
Refined oil 10 tablespoon
Atta / Maida (wheat flour / refined flour) 2 cups
In karahi heat mustard oil and put cumin seeds, chopped garlic and whole red chilli. Once it starts popping up add the washed and soaked dal. Add salt and 1 ½ cup of water. Mix well. Put the lid on and cook on a low flame for 15 mintues. Check if the dal has been done and the water has been evaporated. Put off the gas and let it cool. Once it is cooled grind the dal into ‘ puran’ ( stuffing).
Take the maida in a bowl and put 2 tablespoon of refined oil mix it together then put some water and make dough. Take small balls from the dough and stuff it with Dal puran and with the help of chawka and belan flatten it to make ‘puries’
Switch on the cooking gas and place a pan or karahi on high flame . Put refined oil and shallow fry the ‘puries’. Our dalpuri is ready, serve it with Kheer.
