Rice - 1/3 cup
Milk - 1 Ltr
Sugar - 3/4 cup
Rose Water - 1.5 Tbsp
Cardamom / Elaichi Powder - 1/4 Tsp
Saffron / Kesar - 1/8 Tsp
Saffron / Kesar essence - 4-5 drops
Kewra / Kevda essence - 16-18 drops
Almonds - 8 (shavings)
Pista - 30(shavings)
Rose petals - few
Take rice in a bowl. Wash it and drain the water. Soak the rice in 1/4 cup of water and leave it for about 2 hours.
Leave the water in the bowl, and put the rice in a grinder. Coarsely grind it so that little rice crystals are visible. Add the water from the bowl in the grinder, and keep the jar aside.
Boil milk in a deep heavy bottom pan, preferably a cooker. Once it is boiled, add the grinder contents to the pan.
Mix everything well, keep on stirring it on a medium high flame without leaving it for even one second. Do this for about 15 minutes.
Lower the flame, add sugar, and keep on stirring for another 5 minutes or until the milk thickens.
Add rose water, elaichi powder, kesar, kesar essence and kevda essence. Mix everything well, and cook further on low flame for 5 minutes. Slowly the colour will change to yellow. Turn off the flame, and let it cool down.
Once it is at room temperature, transfer the phirni into any vessel of your choice. Garnish with rose petals and dry fruits shavings. Cover everything with foil paper, and refrigerate for atleast 3-4 hours.
Phirni is ready to be served chilled. Enjoy :)
