Drumstick Brinjal Sambar(murungaka Kathrika Sambar)

Sambar is an all time favourite south Indian recipe. Using Drumstick gives a special flavour and smell to it. It's a traditional recipe, handed down to me from my grandmother. For making sambar there are so many readymade masala powders are available in market, But nothing can beat homemade masala.

Toor dal -1 cup (Split Pigeon pea)
Tomato - 1 (Chopped)
Onion - 1 (chopped)
Salt - As needed
Turmeric powder-1 Teaspoon
Drumstick - 2
Mustard seeds - 1/2 Teaspoon
Tamarind Juice -1/2 cup
Brinjal - 2
Curry Leaves - 6 leaves
Coriander leaves
Chilli powder - 2 Teaspoon
Coriander powder - 3 Teaspoon
Wash the toor dhal and soak for 20 minutes.
In a pressure cooker add Dhal, Salt and Turmeric powder with 2 cups of water.
Cook till 2 whistles.
Open the lid and mash the Toor dhal.
Chop drumstick into small pieces(2 inch pieces) and also chop the brinjals.(Eggplant)
Add chopped vegetables , Onion and Tomato to the dhal.
Add chilli powder and coriander powder.
Cook for 2o minutes and make sure that the drumsticks are softer.Then add Tamarind juice and boil for 10 minutes.
For tempering in a small pan splutter mustard seeds then add Black gram and Curry leaves.
Add this to sambar and garnish with coriander leaves.
Serve it hot with rice.
If you want to use readymade sambar powder just add readymade powder and salt with the dhal instead of the ingredients I used.
