Dry Fried Avial
This traditional dish was transferred from my mom to me.It's full of love.Especially good for diabetic people as it's full of veggies.You will love it
A cup of all types of cut veggies
Half cup grated coconut
Few mustard,curry leaves
1tsp chilly powder
Pinch of turmeric
Pressure cook all veggies for 2 whistles
In a grinder put all coconut,spice powders,garlic,chillies,onions ,salt and crush
In a pan pour oil and splutter mustard,curry leaves.Then add ground masala and stir fry for 5minutes.
On top of it add cooked veggies and close lid for about 5minutes.
Veggies include yam,potatoes,brinjals,carrots,cucumber,tomatoes,beans etc
